The very process of acidifying food is an ancient tradition and an excellent method of preserving the nutrients in a raw material. Sour herring is mainly produced along the Norrland coast and the High Coast, but is sold and enjoyed throughout Sweden.
It is said that real enthusiasts can say with certainty where the herring is fermented and enjoy it pure, like a vintage wine, but it is usually eaten as a classic “sour herring clip” with flatbread, almond potatoes, sour cream and onions. In addition, the most common drinks are beer and schnapps, but also must, soft drinks and milk.
